| 3 Pesticide Residues in Agricultural Products

| A simple and rapid method was investigated for the determination of pesticides in food. Then, various kinds of pesticides in agricultural products were examined by using these methods. Organophosphorus, pyrethroid and other pesticides were found. Translocation of pesticide from the peel to the flesh of fruit was investigated. The almost amount of organochlorine and organophosphorous pesticides does not move into the flesh. The relationship between the concentration ratio of the flesh to the peel and the pesticide solubility in water was determined by a simple correlative expression. During the cooking process, the pesticide residue of the products decreased. The pesticide remained in the processed food according to the Kow expression. |
